Our Story

Mangia Bene, Vive Bene!

I have been related to the Italian language, music and food since I was a child, I grew up listening to how my father, a doctor from a rural community in Mexico, where I was born and lived with my family, loved to insert Italian words into his conversations, for that reason when I was 6 years old and he brought a puppy that would be the first pet for me and my siblings and asked me how I would call it, I said “Paratuti” (Per tuti, Italian expression meaning “for everyone”).

My passion for cooking began when I saw and admired how my mother could convert in delicious meals all the fresh vegetables and fruits that the people of our community brought to our house, in gratitude for my father’s services. That’s why, when I first introduced myself to Italian food, I immediately fell in love with it, this happened at Sorrento Grille, a restaurant located in Laguna Beach, California. I was 30 years old when I started working there as Day Kitchen Manager from 1988 to 1993, glorious years working with chef Duilio Valenti, his famous quote? “Mangia bene Vive bene” (eat well, live well) that was our working environment! there I discovered for the first time ingredients such as basil, Kalamata olives, Porcini mushrooms, rosemary, truffle and more to create natural, fresh foods, with no complicated or contradictory savors that fill your mouth with flavors, your tummy with health and your soul with happiness.

He estado relacionado con el idioma italiano, la música y la comida desde que era niño, crecí escuchando cómo a mi padre, un Doctor de una comunidad rural en México, donde nací y vivía con mi familia, le encantaba insertar palabras en Italiano en sus conversaciones, por esa razón cuando yo tenía 6 años y él trajo un cachorro que sería la primera mascota para mí y mis hermanos y me preguntó cómo lo llamaría, dije “Paratuti” (Per tuti, expresión en Italiano que significa “para todos”) Mi pasión por la cocina comenzó cuando vi y admiré cómo mi madre podía convertir en deliciosas comidas todas las verduras y frutas frescas que la gente de nuestra comunidad traía a nuestra casa, en agradecimiento por los servicios de mi padre.

Es por eso que, cuando conocí la comida italiana, inmediatamente me enamoré de ella, esto sucedió en Sorrento Grille, un restaurante ubicado en Laguna Beach, California. Tenía 30 años cuando comencé a trabajar allí como Day Kitchen Manager de 1988 a 1993, años gloriosos trabajando con el chef Duilio Valenti, ¿su famosa cita? “Mangia bene Vive bene” (comer bien, vivir bien) y todo esto dicho con gestos festivos y divertidos, ¡ese era nuestro entorno de trabajo! Allí descubrí por primera vez ingredientes como la albahaca, las aceitunas Kalamata, los hongos Porcini, el romero, la trufa y más para crear alimentos naturales y frescos, sin sabores complicados ni contradictorios que llenan tu boca de placenteras sensaciones, tu barriga de salud y tu alma de felicidad.
